Imagine a the perfect vanilla cupcake: it’s golden brown, soft, moist, topped with fluffy buttercream frosting… And that scent of home baked goodness! Now imagine the same but only that these are low calorie vanilla cupcakes that you can eat without filling guilty for the extra calories.
Is it even possible to prepare such a sweet treat with less calories? Yes! The only thing you should do is substitute the main calorie heavy ingredients with low calorie alternatives. There are many recipes for low calorie vanilla cupcakes available online. My favourite one is super easy to make, has just a fraction of the nutritional value of the Classic Vanilla Cupcake and is so tasty that you cannot tell the difference. And there is more: you can top it with one of my favourite low calorie cupcake frostings to make it just like the real thing!
Here’s how to prepare it!
Ingredients for 12 Low Calorie Vanilla Cupcakes:
- 100 grams all purpose flour
- 1 tbs baking powder
- 60 grams stevia
- 2 eggs
- 150 grams Greek yogurt
- 1 tsp vanilla extract
As you can see all the basic ingredients for a vanilla cupcake are there but instead of regular granulated sugar we are going to use stevia. This is a natural sweetener extracted from the leaves of a plant. Stevia is much sweeter compared to sugar yet it’s considered a no-calorie sweetener.
How to prepare your cupcakes:
- Preheat the oven to 180 C
- Line a cupcake tray with cupcake cases. I have a 12 cupcake tray. You can use a smaller one and bake in batches. If you decide to do so, check out my 5 Tips for Baking The Perfect Cupcake to find out advice on the baking process.
- Soft together the flour and baking powder.
- Beat together the eggs and stevia until light and fluffy.
- Gently add the yogurt and vanilla extract and combine until you get a smooth pancake like mixture.
- Add the flour in portions while carefully whisking until all flour is in the mix.
- Spoon the mixture into the cupcake cases filling them 3/4 to the top. You can use an ice cream scoop to make the process easier.
- Bake for 15 minutes or until a toothpick inserted into the centre of a cupcake comes out clean or with just a few crumbs on it.
- Leave cupcakes to cool in the tray for about 10 minutes and serve; or transfer on a wire rack to cool completely.
- Top with a low calorie cupcake frosting of your choice. Just remember – always add frosting only after your low calorie vanilla cupcakes are completely cool.
