At a first glance, a classic vanilla cupcake might seem a bit simple. After all, it lacks the sophisticated taste of most of its classic competitors, right?
Yet again, a classic cupcakes recipe such as the vanilla cupcake offers an easy-to-make, budget sweet treat that is perfect for every occasion! I love preparing these every once in a while just to have something sweet to enjoy during the day, or even when I want my kitchen to carry the romantic scent of vanilla and home baked goodness. The vanilla cupcake is a great companion for your morning coffee or afternoon tea, and topped with a tasty frosting it becomes a crowd pleaser during a birthday party or just about any other home gathering.
Here’s how I make the vanilla cupcake classic cupcakes recipe:
Ingredients for the classic vanilla cupcake:
- 120g non salted butter, softened
- 120g casted sugar
- 120g flour
- 1 tsp baking powder
- A pinch of salt
- 2 eggs, large
- 1/2 tsp vanilla extract
Note: you can use self-rising flour and if you opt for it, don’t add baking powder.
How to make the perfect vanilla cupcake:
- Preheat your oven to 180 C
- In a large bowl sift the flour with the baking powder and a pinch of salt.
- Fill a 12 cupcake tray with cases
- Beat the softened butter with the sugar. Use an electric whisk or beat it by hand using a wooden spoon.
- Once the butter-sugar mixture is pale yellow, almost while and fluffy, whisk in the eggs, one at a time.
- Add the vanilla extract and gently whisk it into the mixture.
- Start adding the flour, little by little, while gently folding it into the mix, until all flour is in the mixture. It is better to use a low speed on the electric whisk for this step or do it by hand with a wooden spoon. When all flour is combined you should have a silky smooth mixture ready to go into the cupcake cases.
- Spoon the mixture into the cupcake cases filling them 3/4 to the top.
- Bake for 15-17 minutes until golden colored. If you are unsure whether your vanilla cupcakes are ready to go out of the oven, insert a toothpick into the middle section of a cupcake and see if it comes out clean – that would be a sign that you should take them out of the oven; if there is batter attached to the toothpick, let them bake for a couple of minutes more and repeat the test.
- Take the cupcake tray out of the oven. Let the cupcakes rest for about five minutes in the tray. After that, transfer them to a wire rack and to cool.
That’s all there is to making this classic cupcakes recipe. It will take just about half an hour of your time – approximately 10-15 minutes for preparation and about 15 mins for baking.
Finish with a Perfect Cupcake Frosting
If you followed the steps above, you should end up with 12 beautifully baked, golden-brown vanilla cupcakes. You can sprinkle some powdered sugar on top or top it with the classic vanilla buttercream frosting and get the most of this recipe. Other great frosting options for vanilla cupcakes are Marshmallow buttercream, lemon whipped cream and almost all fruit flavored frostings.
