For these Brownie Cupcakes, we will make classic brownie batter and bake it into cupcake cases. This cupcake recipe is perfect for all who love chocolate – it features intense, decadence chocolate flavor. The texture of the cupcakes is much like a real classic brownie – chewy inside and crisp on the outside.
These Brownie Cupcake recipe is not only extra tasty, but it is very easy to make. However sophisticated the taste, you will need only traditional, simple ingredients. Plus, all can be done in one bowl and without the need of electric mixer. Now, how great is that?
Ingredients:
- 90 g dark chocolate, chopped
- 90 g butter
- 150 g brown sugar
- 2 eggs
- 1 tbsp rum extract
- 80 g all purpose flour
- 50 g cocoa powder
- ½ tsp baking powder
- ½ tsp salt
How to prepare this Brownie Cupcakes recipe:
- Preheat oven to 180°C
- Put the butter and chopped dark chocolate in a heatproof bowl and melt until smooth. For best result melt in a water bath (pour a bit of water in a pan, place the bowl in the water and place of the stove; stir occasionally while butter and chocolate melts). on top.
- Wait for the butter and chocolate mixture to cool down and stir in the sugar, beaten eggs, vanilla extract.
- Mix the flour, cocoa powder and baking powder together. Gently fold in the mixture.
- Line a cupcake tray with liners and fill each about ⅔ full.
- Bake for 20-30 minutes and check with a toothpick if the cupcakes are ready (it should come clean or with a few crumbs).
- Cool in the pan for 5-10 mins and transfer on a wire rack to cook completely.
These Brownie Cupcakes are so tasty that they don’t really “need” any frosting. On the other hand, you can take your chocolate creation one step further and combine with whipped cream ganache frosting or the classic chocolate buttercream frosting. In fact, you can simply choose one of your favorite buttercream frosting flavors for cupcakes and you cannot go wrong.
